Lavender Lemon May Recipe

Get your gin and tonic ready for spring! With sprigs of fresh lavender and lemon juice, this cocktail is almost too pretty to drink.


  • ¼ cup dried lavender
  • ½ cup sugar
  • ½ cup water
  • 1 ounce gin
  • 1 ounce lemon juice
  • 3 ounces tonic water
  • Lemon sprigs


  1. Prepare the lavender simple syrup by combining the dried lavender, sugar, and water in a small saucepan. Bring the mixture to a boil, and stir until sugar dissolves. Continue to simmer for one minute, and then remove from heat. Pour through a mesh strainer to remove the lavender pieces and set aside.
  2. In a shaker filled halfway with ice, combine the gin, lemon juice, lavender simple syrup, and tonic water. Shake until chilled, and strain into glass. Garnish with lemon slices and lavender sprigs, if desired.
